If you aspire to become a pastry chef, this qualification is the perfect choice for you. Focusing on the essential skills needed in patisserie and confectionery, it’s ideal for aspiring patissiers, pastry cooks, and other catering professionals. This course is also a great starting point for anyone passionate about baking and eager to refine their skills to a professional standard.

You’ll gain hands-on experience through a variety of practical activities in our training kitchens on this one day a week course. The hot and cold desserts, breads, and cakes you create will be showcased and sold in our student-led BR6 Bakehouse and Restaurant.

    • Hot and cold desserts and puddings
    • Produce paste products
    • Biscuit, cake and sponge products
    • Fermented dough products and bread
  • Entry Requirements
    • Be over 19
    • Have either 4 GCSEs at grades 9-3 (A*-D) (English and maths desirable) OR a Level 1 qualification.
  • Assessment

    Practical and written assessment set by the awarding body and one formal exam for Food Safety (unless previously achieved).

  • Moving Forward

    This qualification can help you to progress in your career as a pastry chef or to work in a bakery.

  • Delivery

    This course is taught on Orpington Campus on Wednesdays at 4pm to 9pm
